Shrimp and rice porridge, also known as congee, is a popular dish in many Asian countries and is often consumed for breakfast or as a comfort food. The dish is traditionally made by simmering rice in a large amount of water or broth until it breaks down and becomes a thick, creamy porridge. Shrimp and other meats or vegetables are often added for additional flavor and nutrition. This particular recipe features shrimp, shallot, garlic, fish sauce, and a handful of fresh herbs to infuse the porridge with flavor.

Instructions

1.In a medium bowl, combine the shrimp, shallot, garlic, fish sauce, black pepper, and salt. Set aside.
2.In a large pot, bring the chicken broth to a boil over high heat. Add the rice and reduce the heat to low. Cook for about 20 minutes, stirring occasionally, until the rice is soft and porridge-like in consistency.
3.Heat the vegetable oil in a small skillet over medium-high heat. Add the chopped tomato and cook, stirring occasionally, until the pieces begin to break down and release some liquid, about 3 minutes.
4.Add the shrimp mixture to the rice porridge and stir to combine. Cook for about 2 minutes, until the shrimp are fully cooked and pink.
5.Serve hot, garnished with the green onions and cilantro.
