Ingredients

1/4 cup kosher salt
1 lb linguine
2 tablespoons unsalted butter
1 tablespoon olive oil
1 lb large shrimp , peeled and deveined
2 tablespoons essence seasoning salt
1 1/2 teaspoons salt
1 cup finely chopped yellow onion
1/4 cup finely chopped jalapeno
1 tablespoon minced garlic
1 1/2 cups heavy cream
1/2 teaspoon fresh ground black pepper
1 cup diced tomato
1/2 cup reserved pasta cooking water
1 cup grated monterey jack pepper cheese
1/4 cup grated parmesan cheese
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves
This Shrimp and Pasta in a Tomato-Chile Cream Sauce is a delicious dish that typically consists of linguine, shrimp, tomato, jalapeno, cream, and a variety of seasonings to create a spicy pasta experience that is perfect for a busy weeknight dinner. Instructions

1.In a large pot, bring 5 quarts of water to a boil, then add kosher salt and bring the water back to a boil.
2.Add linguine and cook pasta until tender but still firm to the bite. Reserve 1/2 cup of pasta cooking water and drain pasta.
3.In a large skillet, melt the unsalted butter over medium-high heat and add olive oil. When hot, add the shrimp and season them with essence seasoning salt and 1 teaspoon of salt. Cook until they are pink, about 2 minutes per side. Remove shrimp and set aside.
4.In the same skillet, add yellow onion, jalapeno, and garlic. Saute until onion becomes translucent, about 3 minutes.
5.Pour in heavy cream and ground black pepper, stirring occasionally until sauce thickens slightly, about 5 minutes.
6.Add tomato and stir to combine, then add reserved pasta cooking water. Simmer until tomato is heated through, about 2 minutes.
7.Add Monterey Jack pepper cheese and parmesan cheese, stirring to combine until cheeses have melted, about 5 minutes.
8.Return shrimp to the skillet with the sauce and add chopped parsley and basil leaves, then mix well.
9.Add cooked linguine to the skillet with the sauce, and toss until pasta is coated with sauce evenly.
