Ingredients

1/4 cup oil , olive , divided
1 1/2 cups onions , diced
7 tomatillos , medium , charred , husks removed
2 cups avocados , diced
3 tablespoons cilantro , chopped
1 tablespoon cumin , seeds , toasted
1/2 teaspoon salt , as needed
1/8 teaspoon pepper , black
8 tortillas , 6 inch
2 cups monterey jack cheese , shredded , divided
1 1/2 teaspoons garlic , minced
1 teaspoon chipotle pepper , minced
24 shrimp , large , peeled and deveined
Shrimp and avocado quesadillas are an excellent choice for any meal; breakfast, lunch, or dinner. It is a simple recipe that can be whipped up in just a few minutes. Instructions

1.Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
2.Add onions and cook until they become soft and translucent.
3.In a blender or food processor, purée the charred tomatillos, avocados, cilantro, cumin, salt, pepper, and 2 teaspoons of oil until the mixture is smooth.
4.Add the garlic and chipotle pepper to the skillet and cook for 2 minutes.
5.Add the shrimp and cook until they become pink in color for about 5 minutes.
6.Remove the shrimp mixture from the skillet and set aside.
7.Spread a tortilla with 1/4 cup cheese, then add a layer of the shrimp mixture and top with another 1/4 cup cheese.
8.Top with another tortilla.
9.Repeat with the remaining tortillas and filling.
10.Heat the remaining oil in a large skillet over medium-high heat.
11.Add the quesadillas one at a time to the skillet and cook for about 2-3 minutes on each side, or until they are golden and crispy.
12.Cut each quesadilla into 4 wedges and serve.
