Ingredients

1 kg full cream fresh yoghurt
1 1/2 cups ground sugar
1/2 teaspoon saffron
1 1/2 teaspoons cardamom powder
2 cups self raising flour
1 tablespoon oil
1/2 teaspoon salt
water , drained from the hung yoghurt ( use to knead the puri dough )
oil , to deep fry the puris
Shrikhand and Puri is a popular dessert in India, especially in the Northwest part of the country. It's often served during festivals, such as Janmashtami, which marks the birth of Lord Krishna, and Diwali, the festival of lights. Shrikhand is a sweet, creamy dish made from hung yoghurt, and flavored with saffron and cardamom. Puri, on the other hand, is a fried bread made of self-raising flour, mixed with salt and oil. Eating Shrikhand and Puri together creates a perfect balance of sweet and savory, making it the ideal dessert for those with a sweet tooth who also love savory food.

Instructions

1.For Shrikhand:
2.Place the hung yoghurt in a mixing bowl and add in sugar. Mix well until the sugar completely dissolves.
3.In a separate bowl, soak saffron in a tablespoon of water for few minutes.
4.Add in the soaked saffron along with the water, and cardamom powder into the yoghurt mixture.
5.Mix well and refrigerate for 2-3 hours before serving.
6.For Puri:
7.In a medium bowl, mix together flour, salt, and oil.
8.Add the drained water from the hung yoghurt, and knead the dough until soft and pliable.
9.Cover the dough and let it rest for 30 minutes.
10.Roll out small balls of the dough and flatten them into small circles.
11.Heat oil in a deep frying pan and deep fry the puris until they puff up and turn golden brown.

PROS

Shrikhand and Puri is a delicious dessert where the sweet, creamy Shrikhand is perfectly balanced by the savory, crispy Puri.

Easy to prepare, they are perfect for festivals, parties, or any other occasion.

CONS

Due to the high sugar content, Shrikhand should be consumed in moderation.
As for Puri, it is deep fried and therefore high in calories and fat.

If you have any dairy allergies or lactose intolerance, Shrikhand is not a suitable dish for you.

HEALTH & BENEFITS

While not particularly healthy, the saffron in Shrikhand has been known to contain antioxidants which help reduce inflammation.
Cardamom, on the other hand, helps in digestion, and lowers blood pressure and cholesterol.
As for Puri, it is a source of carbohydrates which provide energy to the body, but should be eaten in moderation.
