Ingredients

1 1/2 1 1/2 lbs bottom round steaks or 1 1/2 lbs flat iron steaks , cut 1/4-inch thick and trimmed of visible fat
1 lime , juice of
4 large garlic cloves , pressed through a garlic press
1 -2 teaspoon pequin quebrado chiles or 1 -2 teaspoon crushed red pepper flakes
2 teaspoons vegetable oil
1/4 cup brandy
4 -6 flour tortillas
4 -6 romaine lettuce leaves , cut crosswise into 1-inch strips
1/2 - 1 cup salsa
1/2 - 1 onion , chopped
1/2 - 1 tomatoes , chopped
3 -4 tablespoons fresh cilantro , chopped
1/2 cup sour cream
guacamole , for serving with the fajitas

Instructions

1.In a large bowl, marinate the steak with lime juice, pressed garlic cloves, pequin quebrado chiles or crushed red pepper flakes, and vegetable oil.
2.Heat a heavy large skillet over medium-high heat, add the marinated steak, and cook for 3-4 minutes until browned.
3.Pour the brandy over the steak and carefully light it with a long match or lighter. Let the flames burn out on their own.
4.Warm up the flour tortillas in a dry skillet or oven.
5.Assemble the fajitas by placing the cooked steak strips on the tortillas and top with romaine lettuce leaves, salsa, chopped onion, tomatoes, fresh cilantro, and sour cream. Serve with guacamole on the side.
