Shortcut Boeuf (Beef) Bourguignon is a French stew that is traditionally made with cubed beef chuck, bacon, red wine, and vegetables like carrots and potatoes. It is a recipe that requires slow cooking over several hours, but this shortcut version cuts down on the cooking time while still delivering the familiar, comforting flavors of the classic dish. The beef stew meat is simmered in a red wine and beef broth sauce, with the addition of bacon, onions, and mushrooms. It is perfect served over mashed potatoes or egg noodles.

Instructions

1.Preheat oven to 350°F.
2.Heat a Dutch oven over high heat and cook the bacon for 3 to 4 minutes until crispy.
3.Add the onions and mushrooms to the pot and cook for 5 to 7 minutes until tender.
4.Add the beef stew meat to the pot and sprinkle with flour and garlic. Cook for 5 minutes until browned.
5.Add the red wine, beef broth, bay leaf, thyme, salt and pepper to the pot. Stir to combine all ingredients.
6.Cover and place the pot in the oven for 1.5 to 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

PROS

This recipe is a shortcut version of the classic Beef Bourguignon recipe but still has all the delicious flavors.

It is perfect for those who are short on time but still want a hearty beef stew.

It is a one-pot meal and can be made-ahead of time.

CONS

This recipe uses beef stew meat instead of the more expensive cubed beef chuck, which will result in a less tender meat.

It does not include traditional vegetables in the recipe, like carrots or potatoes.

HEALTH & BENEFITS

Beef stew is a good source of protein and iron.
The onions and mushrooms provide additional vitamins and minerals, while the garlic may have immune-boosting properties.
