1 can mild green chilies ( optional )
1 cup chunky salsa
3 cups shredded cheddar cheese , divided
8 soft taco-size flour tortillas
2 cans red enchilada sauce
1 can sliced black olives ( optional )
1/4 cup chopped green onion ( optional )
These Shortcut Beef or Chicken Enchiladas are a quick and easy dinner option for those busy weeknights. Using canned meat and pre-made sauce, these enchiladas are ready to bake in just a few minutes. The combination of beef or chicken, cheese, and enchilada sauce is a classic Mexican flavor that the whole family will enjoy. Instructions

1.Preheat oven to 350°F.
2.In a large bowl, mix together the canned beef or chicken, green chilies (if using), salsa, and 2 cups of shredded cheddar cheese.
3.Spoon 1/8 of the mixture onto each flour tortilla and roll up tightly, placing seam-side down in a 9x13 inch baking dish.
4.Pour the enchilada sauce over the top, making sure to coat each tortilla well.
5.Sprinkle the remaining shredded cheese over the top, followed by the sliced black olives (if using) and chopped green onion (if using).
