Ingredients

4 dried ancho chiles , stemmed , seeded , and ribs discarded
2 cups boiling-hot water
1 medium onion , quartered
3 cloves garlic , coarsely chopped
2 tablespoons finely chopped canned chipotle chiles in adobo , plus
2 teaspoons adobo sauce
2 tablespoons pure maple syrup
1 tablespoon fresh lime juice
3 teaspoons salt
6 lbs short rib of beef ( or flanken )
1 teaspoon black pepper
1 tablespoon vegetable oil
1/2 cup brewed coffee
Short Ribs Braised in Coffee Ancho Chile Sauce is a hearty, flavorful, and rustic dish that is perfect for a cozy dinner at home. This dish is a perfect blend of flavors, with the coffee and ancho chile adding a slightly bitter note that balances well with the sweetness from maple syrup. Instructions

1.Preheat oven to 350°F.
2.Toast dried chiles in a dry 12-inch heavy skillet (not nonstick) over medium heat, turning and pressing with tongs, until more pliable and slightly changed in color, about 30 seconds.
3.Tear chiles into small pieces and puree with soaking liquid in a blender until smooth, about 2 minutes.
4.Add onion, garlic, chipotles with adobo sauce, syrup, lime juice, and 2 teaspoons salt and puree until smooth, about 1 minute.
5.Pat ribs dry and season with remaining 1 teaspoon salt and black pepper.
6.Heat oil in a wide 7- to 9-quart heavy pot over high heat until just smoking, then brown ribs in batches, without crowding, turning occasionally, about 8 minutes per batch.
7.Transfer as browned to a large (17-by 11-inch) flameproof roasting pan.
8.Add puree to pot and cook over high heat, stirring constantly, 2 minutes.
9.Pour in coffee and bring to a boil, then pour over ribs.
10.Cover roasting pan tightly with foil and braise in oven until ribs are very tender, 3 1/4 to 3 3/4 hours total.
11.Serve the dish with some vegetable or bread of your choice.
