1 cup white rice
8 -10 cups warm water
3 1/2 cups sugar
1/4 cup corn oil or 1/4 cup vegetable oil
1/2 cup slivered almonds
1 teaspoon ground cardamom
1/2 cup rose water
1/2 teaspoon saffron
2 teaspoons cinnamon
2 teaspoons slivered pistachios
Sholeh Zard Saffron Rice Pudding is a traditional Persian dessert that has been enjoyed for centuries in Iran and other parts of the world. Instructions

1.Rinse and soak the rice in warm water for an hour. Drain the rice and place it in a large pot.
2.Add 8 cups of warm water to the pot and bring it to boil over high heat. Once the water starts to boil, reduce the heat to medium-low and let the rice simmer for about 45 minutes, stirring occasionally.
3.Add sugar, corn oil, and slivered almonds to the pot, and stir until well combined. Continue simmering the rice for another 45 minutes.
4.Dissolve saffron in rose water and add it to the pot along with ground cardamom and cinnamon. Stir until well combined and continue simmering for another 10-15 minutes.
5.Add some warm water if the pudding is too thick. Remove from heat and let it cool down. Refrigerate the pudding for a couple of hours until cold. Serve chilled, sprinkled with slivered pistachios on top.
