Ingredients

4 wooden skewers , soaked in water for 30 minutes
1 lb white meat chicken , cubed
1 tablespoon white wine vinegar
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 clove garlic , minced
salt
1 cup cucumber , peeled
1 cup plain yogurt
2 cloves garlic , minced
salt and black pepper
4 pita breads ( the soft flat kind , not pocket bread )
1 cup shredded lettuce
sliced red onion
1 tomatoes , chopped

Instructions

1.In a bowl, combine the vinegar, olive oil, oregano, thyme, garlic, and salt. Add the cubed chicken and marinate for at least 1 hour, preferably overnight.

3.In another bowl, season the cucumber and plain yogurt with minced garlic, salt, and black pepper. Process in a blender until smooth, then refrigerate until ready to serve.
4.To assemble, heat the pita bread in a toaster or oven, then slice them in half. Spread the sauce on the inside of the pita, then stuff with shredded lettuce, sliced red onion, tomato, and grilled chicken. Serve immediately.
