Instructions

1.Rinse the rice in several changes of cold water until the water runs clear. In a large pot, bring the 8 cups of water and salt to a boil.
2.Add the rice and stir. Boil for 5-7 minutes, then drain the rice in a fine-meshed colander.
3.Rinse the rice with cold water to cool it down.
4.In a small pot, bring the orange zest, 2 cups of water, sugar, and turmeric to a boil. Let it simmer for 15 minutes until the mixture reaches a syrupy consistency.
5.In a large pot, heat the canola oil over medium-high heat. Add the boiled rice, saffron water, and 2 tablespoons of water. Gently stir the rice to distribute the ingredients.
6.Reduce the heat to low, cover the pot, and let the rice cook for 45-50 minutes.
7.Once the rice is fully cooked, mix in the syrup, half of the slivered almonds, half of the chopped pistachios, and half of the rose water (if using).
8.Use a fork to fluff up the rice and serve hot, garnished with the remaining almonds and pistachios.
