3 sprigs fresh thyme , chopped
1 pinch celery salt
salt and pepper to taste
1 quart hot vegetable stock
2 tablespoons butter
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped flat-leaf parsley

Instructions

3.Add white wine, thyme, celery salt, salt and pepper, and cook, stirring constantly until liquid has been absorbed.
4.Add hot vegetable stock, 1 ladleful at a time, stirring frequently and waiting until the previous liquid has been absorbed before adding more.
5.Cook until rice is creamy and tender, then stir in remaining butter, Parmesan cheese, and parsley.
6.Serve hot.
