4 baking potatoes
1 lb ground beef
1 onion , chopped
1 teaspoon Worcestershire sauce
1 cup beef stock
1 tablespoon tomato puree or 1 tablespoon tomato paste
salt and pepper
fresh grated nutmeg
1 tablespoon milk
1 -2 teaspoon butter
1 cup grated cheddar cheese

Instructions

1.Preheat the oven to 400°F.
2.Scrub the potatoes and pierce them several times with a fork.
3.Bake the potatoes directly on the oven rack for about 45 minutes until soft.
4.While the potatoes are baking, brown the ground beef and onion in a skillet over medium heat.
5.Drain off any excess fat, and add Worcestershire sauce, beef stock, tomato puree, salt, pepper, and grated nutmeg. Simmer for 10-15 minutes, stirring occasionally.
6.Remove the potatoes from the oven and cut them in half lengthwise. Scoop out the inside of each potato half, leaving about ¼ inch of potato flesh.
7.Mash the potato flesh with milk and butter until smooth and creamy, then stir in ½ cup of grated cheddar cheese.
8.Divide the beef mixture among the potato skins and place them on a baking sheet. Top each with a generous spoonful of the mashed potato mixture and sprinkle with the remaining grated cheddar cheese.
9.Bake for 15-20 minutes until the cheese is melted and bubbly.
