Ingredients

12 lasagna noodles
2 cups ricotta cheese
1 egg
2 cups shredded mozzarella cheese , divided
8 ounces Italian sausage or 8 ounces ground beef
1 jar marinara sauce , divided
8 ounces chopped fresh mushrooms
8 ounces frozen spinach
Shea's Lasagna Rolls are a unique twist on traditional lasagna, but with the same great taste. Instead of layering lasagna noodles in a baking dish, each noodle is filled and rolled with a delicious ricotta cheese mixture, ground meat, mushrooms, and spinach. This recipe can be customized to each individual's liking by swapping out meat and vegetables or creating a vegetarian option by removing meat and replacing it with more veggies.

Instructions

1.Preheat oven to 375°F.
2.Boil lasagna noodles until they are al dente, then drain.
3.In a bowl, mix together ricotta cheese, egg, and 1 cup of shredded mozzarella cheese.
4.In a skillet, brown the Italian sausage or ground beef and add mushrooms and spinach to heat through.
5.Spread a few tablespoons of marinara sauce into the bottom of a 9x13 inch baking dish.
6.Spread a tablespoon of the ricotta mixture onto each lasagna noodle.
7.Add a spoonful of the meat and vegetable mixture on top and roll the noodle to secure the filling inside.
8.Place the rolled noodles seam-side down into the baking dish.
9.Once all noodles are rolled and placed into the baking dish, pour remaining marinara sauce over the top.
10.Sprinkle remaining shredded mozzarella cheese over the top.
11.Cover with aluminum foil and bake for 30 minutes.
12.Remove the foil and continue baking for an additional 10-15 minutes, or until cheese is melted and bubbly.
