1 large onion , chopped

1/2 can light red kidney beans , drained and mashed
1 can dark red kidney beans , drained and rinsed
1 can sliced potatoes , drained
Shay's Irish Chili is a twist on traditional chili that incorporates some of the flavors of Ireland. Instructions

1.In a large pot, heat the vegetable oil over medium-high heat.

4.In a small bowl, dissolve the beef bouillon in 1/2 cup hot water, then add to the pot.
5.Add the chili powder, sugar, and diced tomatoes with their juice.
6.Mash the half can of light red kidney beans with a fork, then add to the pot.
7.Add the dark red kidney beans and sliced potatoes.
8.Bring to a boil, then reduce heat and simmer for at least 30 minutes, stirring occasionally.
