Ingredients

1 1/2 lbs prime rib roast , cooked
8 large corn tortillas
12 ounces chunky salsa
1/2 head lettuce , finely shredded
12 ounces Mexican blend cheese , shredded
4 ounces canned jalapeno slices , canned
15 ounces black beans , canned , drained and rinsed ( optional )
16 ounces sour cream
1/4 cup chives , chopped
6 eggs
1/4 teaspoon table salt
1/4 cup whole milk
2 tablespoons butter
1 1/2 quarts canola oil ( optional )
Shawnee Lodge Prime Rib Tex-Mex Breakfast is a mouthwatering and indulgent breakfast dish that combines two of our favorite cuisines: Tex-Mex and American. It's perfect for a lazy weekend brunch or a holiday morning when you have some leftover prime rib from the night before. This breakfast recipe takes a little bit of effort to put together, but the end result is so worth it! The crispy fried tortillas, juicy prime rib, spicy jalapenos and fresh toppings make for a delicious and satisfying meal that will keep you fueled for the day ahead.

Instructions

1.Cut the cooked prime rib roast into small pieces and fry in a frying pan.
2.In another pan, heat up the canola oil and fry the corn tortillas until crispy. Remove and place on paper towels to remove excess oil.
3.In a large bowl, mix the shredded lettuce, shredded cheese, canned jalapeno slices and canned black beans. Reserve some of the cheese and jalapeno slices to garnish the dish.
4.Beat the eggs and milk together with the salt in a separate bowl.
5.In a non-stick pan, melt the butter over medium heat, add the beaten egg mixture and cook until scrambled.
6.To assemble, place the crispy fried tortilla on the bottom, then top with the shredded lettuce, cheese, jalapeno slices, scrambled eggs, fried prime rib and spoonfuls of salsa and sour cream. Garnish with chives, extra cheese and jalapeno slices.
7.Serve and enjoy!
