Ingredients

1/2 cup yellow cornmeal
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/2 cup buttermilk
2/3 cup vegetable oil
1 pound skinless , boneless chicken breast halves
2 cups cooked white rice
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped red onion
1/2 head romaine lettuce - rinsed , dried and shredded
5 slices bacon
3 tablespoons apple cider vinegar
1 tablespoon honey
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Shawna's Southern Fried Chicken Salad is a delicious twist on a traditional salad. The southern flavor of crispy fried chicken adds a delightful crunch to the dish. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.In a large bowl combine the cornmeal, flour, salt, black pepper and cayenne pepper.
3.In another bowl, pour in the buttermilk.
4.Heat the vegetable oil in a large skillet over medium-high heat, until it sizzles when you drop a little cornmeal mixture in.
5.Dip each chicken piece in the buttermilk, and then dredge it in the cornmeal mixture.
6.Cook the chicken in the hot oil until golden brown on one side, then turn and cook until brown on the other side, about 5 minutes per side.
7.Place bacon on a baking sheet and bake in the preheated oven for 10 to 12 minutes.
8.Combine the red and green bell peppers, red onion, and romaine lettuce in a large bowl.
9.In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
10.Crumble the bacon into the bowl with the lettuce mixture.
11.Toss with the dressing.
12.Slice the chicken into thin strips and serve over the lettuce mixture with the cooked white rice.
