3 lbs boneless chuck roast
1/2 onion , diced
1 1/2 cups catsup ( preferably Heinz )
2 tablespoons Dijon mustard
1/4 - 1/3 cup packed brown sugar ( depending on taste )
1/4 cup red wine vinegar
1 teaspoon liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder or 2 -3 garlic cloves , minced

Instructions

1.Preheat oven to 350 degrees F ( 175 degrees C ).
2.In a mixing bowl, whisk the onion, catsup, mustard, brown sugar, red wine vinegar, liquid smoke, salt, pepper, and garlic powder together.
3.Take a baking dish, place the chuck roast in the center of the dish and cover it with the sauce.
4.Cover baking dish with aluminum foil tightly.
5.Bake the beef covered, for 3 to 3 1/2 hours.
6.When the meat is tender, remove foil and return meat to oven to brown the surface for another 20 to 30 minutes.
