Ingredients

1 lb fresh rhubarb , trimmed , washed and cut in 1-inch pieces
1 1/2 - 2 1/2 cups water
2 1/2 cups sugar
3 cups cold water , for serving
crushed ice , for serving ( or shaved ice )
Sharbate Rivas, also known as Rhubarb Sherbet Drink, is a popular summer beverage in Iran. It is made by boiling fresh rhubarb in water until it is tender, then straining the liquid and sweetening it with sugar. The resulting syrup is then mixed with cold water and served over ice. Instructions

1.In a large pot, add the rhubarb pieces and enough water to cover them. Bring to a boil and reduce heat to a simmer, cooking until the rhubarb is very soft.
2.Strain the rhubarb mixture through a fine-mesh sieve into a large bowl, pressing on the solids to extract as much liquid as possible.
3.Return the liquid to the large pot and add the sugar. Cook over medium heat, stirring constantly, until the sugar has completely dissolved. Remove from heat and let cool to room temperature.
4.When ready to serve, fill glasses with crushed or shaved ice, then add the rhubarb syrup and cold water. Stir to combine and enjoy!
