Ingredients

1/4 cup olive oil
1 sweet onion , peeled and diced
3 garlic cloves , peeled and thinly sliced
1/2 teaspoon chili paste
1 teaspoon sea salt
1 teaspoon black pepper , freshly ground
2 teaspoons paprika , sweet
1 teaspoon caraway seed , crushed
1 teaspoon ground cinnamon
3/4 teaspoon ground cumin
1/2 teaspoon turmeric
14 ounces diced tomatoes
2 tablespoons tomato paste
2 teaspoons honey
1 teaspoon balsamic vinegar
1 cup kale , coarsely chopped ( swiss chard or spinach are nice too )
4 ounces feta cheese , cut in generous , bite-sized cubes
4 -6 eggs

Instructions

1.Heat olive oil in a large ovenproof skillet over medium heat.
2.Add onion and garlic to the pan and stir well to coat in oil.
3.Cook for 5-7 minutes until onion is softened and translucent.
4.Add chili paste, salt, paprika, caraway seed, cinnamon, cumin, and turmeric to the pan. Stir well to combine.
5.Pour in diced tomatoes with their juices and stir well. Add tomato paste, honey, and balsamic vinegar and continue stirring.
6.Allow the mixture to simmer on medium heat for 10-15 minutes, stirring occasionally.
7.Preheat oven to 375°F.
8.Add chopped kale to the pan and stir well to combine. Cook for an additional 3-5 minutes on medium heat until kale has wilted down and any excess liquid has cooked off.
9.Turn off heat, and sprinkle feta cheese cubes over mixture.
10.Use the back of a spoon to gently make 4-6 wells in the tomato mixture.
11.Crack an egg into each well, being careful not to break the yolk.
12.Transfer the skillet to the oven and bake for 8-10 minutes until eggs are cooked through.
