4 skinless , boneless chicken breasts
4 fresh green chile peppers
4 slices lowfat Monterey Jack cheese
1 egg white
2 tablespoons water
1/2 cup cornmeal

Instructions

1.Preheat oven to 400 degrees F.
2.Butterfly chicken breasts and flatten slightly with a meat mallet.
3.Roast green chile peppers over an open flame or under the broiler until charred on all sides.
4.Remove skin and seeds from peppers and cut into 4 strips.
5.On each flattened chicken breast, place 1 slice of cheese and 4 strips of roasted pepper.
6.Roll chicken tight and secure with toothpicks.
7.In a bowl, whisk together egg white and water.
