Ingredients

3/4 cup light soy sauce
3/4 cup dark soy sauce
3 cups water
8 scallions , chopped in 1 1/2 lengths , white parts and 2/3 of the green
1 slice gingerroot
1 star anise , broken in pieces
1 peking duck
1/2 lb chinese or korean white rice cake ( ddeok guk ddeok )
Shanghaied Duck Ddeok is a very flavorful and unique dish, originating from the Chinese-Korean fusion cuisine back in the 19th century. It is made by stuffing a whole roasted duck with rice cake, and then cooking it in a mixture of soy sauce, gingerroot, and scallions. Instructions

1.In a mixing bowl, combine the light soy sauce, dark soy sauce and water and mix well.
2.Preheat your oven to 375 degrees Fahrenheit.
3.In a pan, heat the mixture along with the scallions, gingerroot and star anise over low heat for 10 minutes, until the ingredients are fully mixed.
4.Prick the skin of the duck all over with a fork.
5.Brush the duck with the mixture and stuff the duck with the white rice cake.
6.Roast the duck in the oven for 1 hour and 45 minutes, brushing it with the mixture every 15 minutes.
7.Once fully cooked, remove the duck from the oven, carve it, and serve it with the cooked white rice cake.
