Ingredients

3/4 3/4 lb soba noodles or 3/4 lb fresh egg noodles
1/2 cup julienned carrot
1/2 cup mung bean sprouts
1/2 cup extra firm tofu , cut in 1/2-inch blocks
1/2 cup julienned boiled ham
3 tablespoons smooth peanut butter or 3 tablespoons tahini
2 teaspoons white sugar
2 tablespoons soy sauce
1 1 tablespoon white wine vinegar or 1 tablespoon cider vinegar
1 tablespoon toasted sesame oil ( use an Asian variety if possible )
2 tablespoons water
1 medium garlic clove , minced ( optional )
1 pinch chili powder ( optional ) or 4 -6 drops hot sauce ( optional )
Shanghai-Ish cold noodles are a fusion of two cultures. The origin of this dish dates back to 363 BC in ancient China. The dish gained massive popularity after Japanese soba noodles were introduced to China. The addition of vegetables and nutty sauce is a trendy twist. The acidity of the vinegar goes perfectly with soft noodles, and the subtle sweetness compliments the fried ham. This is a perfect make-ahead meal for busy weekdays.

Instructions

1.Cook the noodles according to instructions on the package. Rinse under cold water to cool and drain.
2.In a mixing bowl, whisk together peanut butter/tahini, soy sauce, sugar, vinegar, sesame oil, water, garlic, and chili powder (or hot sauce).
3.In a Salad bowl, mix together cooked noodles, carrot, mung bean sprouts, boiled ham, and tofu.
4.Pour the mixed sauce over the noodles and toss well.
5.Serve chilled and garnished with coriander, sliced cucumber, and scallion.

PROS

Cold noodles are perfect in summer and are a refreshing and light lunch or dinner option.
This dish is quick to make and satisfies different taste buds.

CONS

This recipe is low in protein and high in carbohydrates.
If you are allergic to peanuts, replace peanut butter with Tahini and use different vegetables according to your liking.
