14 cups coarsely chopped napa cabbage ( about 2 pounds )
3 tablespoons kosher salt
1 tablespoon sesame seeds , toasted
2 1/2 tablespoons sambal oelek or 2 1/2 tablespoons thai chili paste
2 tablespoons minced fresh garlic
2 teaspoons dark sesame oil

Instructions

1.Toss the cabbage and salt in a large bowl until the cabbage is coated. Let it sit for 2 hours.
2.Drain the cabbage in a colander and rinse well with cold water. Drain again, pressing lightly.
3.In a large bowl, stir together the sesame seeds, sambal oelek, garlic, and sesame oil. Add the cabbage and toss with your hands until the cabbage is coated with the mixture.
4.Pack the cabbage mixture tightly into a 2-quart jar or other container with a lid. Cover and let sit at room temperature for 24 hours. Store in the refrigerator for up to 2 weeks.
