Ingredients

1/4 cup butter
8 leeks , white & pale green parts only , split lengthwise and cut crosswise into 1/4-inch slices ( about 4 cups )
1 onion , halved , sliced crosswise
3 -4 garlic cloves , minced
2 teaspoons sugar
1/2 teaspoon pepper
1/2 cup Irish whiskey
2 cans beef broth
1 sheet frozen puff pastry , thawed
1 egg
4 ounces grated cheddar cheese or 4 ounces parmesan cheese ( 1 cup , finely grated )
Shamrock Irish Onion Soup is a twist on traditional onion soup with a touch of Irish whiskey. Instructions

1.Melt butter in a large pot over medium heat. Add leeks, onion, garlic, sugar, and pepper, stirring until onions caramelize and leeks soften.

3.Add the beef broth and bring to a boil. Then, reduce heat to low and simmer for 20 minutes.

5.Bake the pastry circles at 400F degrees for about 10-12 minutes or until golden brown.
6.Ladle the soup into bowls and top with a pastry circle before serving.
