Ingredients

1 1/4 cups yellow lentils
4 1/4 cups water
1 pound ground chicken
1 onion , diced
4 green chile peppers , finely chopped , or more to taste
2 tablespoons ginger-garlic paste
1 tablespoon garam masala

1/2 bunch cilantro , chopped
2 eggs , beaten
2 tablespoons vegetable oil , or as needed
Originating in the Mughal Empire, Shami Kebab is a popular dish in South Asian cuisine. The dish gets its name from the Urdu word 'sham', which means evening, as it is traditionally eaten as an evening snack. Shami Kebab can be enjoyed on its own, or with a side of mint chutney and naan bread. This recipe yields 6-8 servings, and can easily be doubled or halved depending on your needs.

Instructions

1.Wash and soak the lentils in enough water for at least 2 hours.
2.Transfer the soaked lentils to a large pot, add water and bring to a boil over medium-high heat.
3.Cook the lentils until they are tender and the water has evaporated completely.
4.Transfer the lentils to a large mixing bowl, and add ground chicken, diced onion, finely chopped green chile peppers, ginger-garlic paste, garam masala, salt, chopped cilantro, beaten eggs, and vegetable oil.
5.Mix everything together until well combined.
6.Take a small portion of the mixture, shape it into a flat patty, and repeat the process until all the mixture has been used.
7.Heat the remaining vegetable oil in a large skillet over medium heat.
8.Fry the patties until golden brown on both sides.
9.Serve hot with mint chutney and naan bread, if desired.
