3 garlic cloves , chopped
2 onions , chopped
1 tablespoon tomato paste
1 cup thick coconut milk ( from the first squeezing of the grated or desiccated coconut )
1 cup chicken stock
1/4 cup desiccated coconut

Instructions

1.In a pan, heat the ghee until melted.

6.Add the chicken stock and bring to a simmer.
7.Cover and simmer for 30 minutes, stirring occasionally.
8.Add the desiccated coconut and coconut milk and stir to combine.
9.Simmer for another 15 minutes, uncovered, until the sauce has thickened and the chicken is cooked through.
10.Serve hot with rice or naan bread.
