Ingredients

1/2 cup ghee ( clarified butter )
1/4 cup cashews
1/4 cup raisins
1/2 cup split yellow lentils ( moong dal )
1 cup basmati rice
1 1/2 cups milk
1 cup jaggery ( palm sugar )
1/2 cup white sugar
1/2 teaspoon ground cardamom
1 pinch edible camphor ( kacha karpoor )
Shakkara Pongal is a traditional South Indian dessert made with lentils, rice, jaggery, and spices. The name Shakkara refers to the sweet taste, which is balanced perfectly with the nuttiness of moong dal and the aroma of cardamom. It is a popular dish during Pongal, a four-day-long harvest festival celebrated in South India. Shakkara Pongal is usually offered to the gods as a token of gratitude and then shared with family and friends during the festival. It is served hot and is typically eaten as a dessert or during breakfast.

Instructions

1.In a large pot, heat the ghee on medium-high heat.
2.Add the cashews and raisins and saute for 2-3 minutes until they turn golden brown. Remove and keep them aside.
3.In the same pot, add the moong dal and stir for 3-4 minutes until fragrant.
4.Rinse the basmati rice and add it to the pot. Stir for a few minutes until coated with the ghee and dal.
5.Add 3 cups of water, milk, and jaggery to the pot and bring it to a boil.
6.Lower the heat and let it simmer until the rice and lentils are cooked and the mixture thickens. This should take around 20-25 minutes.
7.Add the white sugar, cardamom, and edible camphor to the pot and mix well.
8.Lastly, add the cashews and raisins to the pot and mix well before serving.
