1/2 cup canola oil ( for stir-frying )

1 cup thinly sliced red onion
3 green onions , cut into 1-inch pieces
2 tablespoons unsalted butter
1 bunch watercress
1/4 cup light soy sauce
1/4 cup mirin rice wine
1 tablespoon dark soy sauce
1 tablespoon sugar
2 teaspoons fish sauce
Bo Luc Lac, also known as Shaking Beef, is a Vietnamese dish that originated in the French colonial period. Instructions

1.In a small bowl, whisk together the black pepper, kosher salt, and sugar.
2.Put the filet mignon cubes into a large bowl, sprinkle with the spice mixture, and then toss to coat well.
3.In a wok or large skillet, heat 1/2 cup of canola oil over high heat. When the oil is hot, add the beef cubes and stir-fry for 2-3 minutes or until browned. Remove the beef cubes from the pan with a slotted spoon and set them aside.
4.Add the remaining 2 tablespoons of canola oil to the same wok or skillet over high heat. Add the chopped garlic, sliced red onion, and green onions, and stir-fry for 2-3 minutes or until the onions are soft.
5.Add the unsalted butter to the wok or skillet and stir until melted. Add the watercress, light soy sauce, mirin rice wine, dark soy sauce, sugar, and fish sauce, and stir for 1-2 minutes or until the watercress is wilted.
6.Return the beef cubes to the wok or skillet, and stir until heated through. Serve immediately with steamed rice and enjoy!
