1/4 teaspoon black pepper
1/2 lb firm tofu , finely crumbled ( Organic )
1 tablespoon ginger , minced ( Organic )
1 1/2 tablespoons garlic , minced
2 tablespoons tamari
5 tablespoons toasted sesame oil
1 1/2 tablespoons brown rice vinegar
1/4 cup carrot , Shredded ( Organic )
3 tablespoons cilantro , finely chopped ( Organic )
2 cups water , filtered
1/2 tablespoon cornstarch
12 -18 wonton wrappers ( depending on Package size )
2 tablespoons sunflower oil , for cooking the potstickers
Sesame Tofu Pot Stickers, also known as vegetarian potstickers, are a popular Chinese appetizer that can be steamed, boiled, or pan-fried to a crispy golden brown. They are made by stuffing wonton wrappers with a savory filling of finely crumbled tofu mixed with shredded cabbage, carrot, and fresh herbs. The filling is flavored with ginger, garlic, tamari, toasted sesame oil, and brown rice vinegar that give it a tangy, salty, and slightly sweet taste. Potstickers are best served with a dipping sauce of tamari or soy sauce mixed with rice vinegar that complements their flavor and adds extra umami. Instructions

1.In a mixing bowl, combine the sliced cabbage with the sea salt and black pepper, and mix well.
2.Add the finely crumbled tofu, minced ginger, minced garlic, tamari, 3 tablespoons of the toasted sesame oil, brown rice vinegar, shredded carrot, and chopped cilantro. Mix all of the ingredients well.
3.In a small bowl, combine the filtered water and cornstarch to make a slurry.
4.Place the wonton wrappers on a clean surface, and brush the edges with the cornstarch slurry.
5.Spoon a heaping tablespoon of the filling onto the center of each wrapper, and fold it in half to form a half-moon shape. Pinch the edges together to seal the filling inside.
6.Heat the remaining 2 tablespoons of toasted sesame oil and sunflower oil in a non-stick skillet over medium-high heat.
7.Arrange the potstickers in the hot oil, flat side down, and fry until golden brown, for about 3-4 minutes.
8.Pour 1/4 cup of filtered water into the skillet, and quickly cover the skillet with a lid to trap the steam and cook the potstickers for about 3-4 minutes.
9.Remove the lid and cook until the remaining water has evaporated and the potstickers are crispy again.
10.Serve the Sesame Tofu Pot Stickers with a dipping sauce of tamari or soy sauce mixed with rice vinegar.
