1 cup chicken broth

8 ounces dried somen noodles
1 lb chicken cutlet
1/4 teaspoon fresh ground black pepper
1/3 cup toasted sesame seeds
2 teaspoons sesame oil
4 baby bok choy , cut in half lengthwise
1 red bell pepper , sliced
1 lime , cut into wedges

Instructions

1.In a bowl, pour boiling water over dried mushrooms and soak for 15 minutes. Remove the mushrooms and set aside the soaking liquid.
2.Combine soaking liquid, chicken broth, soy sauce, fish sauce, garlic, ginger, and serrano chili in a pot and bring to a simmer.
3.Boil somen noodles according to package instructions, then rinse with cold water and set aside.
4.Cut chicken into bite-sized pieces and season with black pepper. Coat with sesame seeds.
5.In a pan, heat sesame oil over medium heat and cook chicken until browned and cooked through. Set aside.
6.In the same pan, stir-fry bok choy and red bell pepper until softened. Add mushrooms and stir-fry for 1 minute more.
7.Divide noodles between four bowls and ladle broth over them. Top with chicken and vegetables. Serve with lime wedges.
