Ingredients

1 1/3 cups flour
1 teaspoon ground cardamom
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup margarine or 1/2 cup butter ( 1 stick )
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup tahini
1 teaspoon vanilla extract
2 tablespoons sesame seeds
1 teaspoon fresh ginger ( optional )
Sesame Cardamom Tea Cookies are a unique twist on traditional tea cookies. Instructions

1.In a medium mixing bowl, combine the flour, ground cardamom, salt, and baking powder. Set aside.
2.In a large mixing bowl, cream together the margarine/butter, white sugar, and brown sugar. Once well-combined, add the tahini, vanilla extract, and fresh ginger (if using) to the bowl and mix well.
3.Add the dry ingredients to the wet ingredients and mix until a dough forms.
4.Preheat your oven to 350°F (180°C). Roll the dough into 1-inch (2.54cm) balls, then roll them in sesame seeds to coat. Space the balls out on a lined baking sheet and flatten them slightly with the back of a fork.
5.Bake the cookies for 10-12 minutes, until golden brown on the bottom. Remove them from the oven and let them cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

PROS

These cookies are subtly sweet and have a nutty flavor from the tahini and sesame seeds.

They are vegan and can be made gluten-free if using a GF flour blend.
