Ingredients

1 1/2 cups self raising flour
1 ounce salted butter
1 large egg
2 tablespoons whole milk
4 ounces mull of kintyre cheese or 4 ounces scottish seriously strong cheddar cheese
1/3 teaspoon salt
1 1/4 teaspoons mustard powder
1 pinch cayenne pepper
These Seriously Strong Scottish Cheese Scones are a savoury take on the classic afternoon tea treat. The sharp and tangy flavour of the Scottish cheddar pairs perfectly with the spicy mustard and cayenne pepper, making for a mouth-watering snack or breakfast option. Whether enjoyed warm with a slather of butter or cold with a dollop of chutney, these scones are sure to be a hit with cheese lovers.

Instructions

1.Preheat oven to 200°C/180°C fan
2.In a large mixing bowl, rub the butter into the flour until it resembles breadcrumbs. Stir in the salt, mustard powder and cayenne pepper.
3.3.Grate the cheese and add it to the bowl, mixing until it is evenly distributed.
4.In a small jug, beat the egg and milk together.
5.Make a well in the centre of the dry ingredients and pour in the egg and milk mixture.
6.Mix together quickly to form a soft dough.
7.Turn out onto a lightly floured surface and knead very lightly until just smooth.
8.Press out to 2.5cm thickness. Cut into rounds using a fluted cutter or a glass.
9.Arrange scones on a baking sheet lined with baking paper. Brush the tops with any remaining egg and milk mixture.
10.Bake for 12-15 minutes or until risen and golden on top.
11.Cool on a wire rack before serving.
