Instructions

1.Preheat the oven to 325°F
2.In a medium bowl, whisk together flour, rice flour, and sugar.
3.Cut in the butter and bring the dough together until it resembles crumbs but holds together when squeezed.
4.Press into a 10-inch round pan and mark the surface into 12 even wedges with a fork.
5.Sprinkle sanding sugar over the top.
6.Bake for 35-40 minutes, or until light golden brown.
7.Remove from the oven and cool completely in the pan.
8.Once cooled, cut into wedges along the marked lines.
