Instructions

1.In a mixing bowl, combine the flour, baking powder, salt, sugar, eggs, and pandan extract (or vanilla extract).
2.Add the coconut cream and mix well until the batter is smooth and free of lumps.
3.Melt the butter over low heat and add it to the batter, stirring to combine.
4.Cover the bowl with plastic wrap and let the batter rest at room temperature for 30 minutes.
5.In a small pot, combine the brown sugar, granulated sugar, salt, and sliced vanilla pod. Add the coconut milk and stir well.
6.Cook the mixture over medium heat, stirring occasionally, until the sugar is completely dissolved.
7.Strain the mixture through a sieve to remove the vanilla pod, then pour it back into the pot.
8.Return the pot to medium heat and cook until the mixture thickens and forms a syrup.
9.Heat a non-stick pan over medium-low heat.
10.Ladle a small amount of batter into the pan, tilting and rotating the pan to distribute the batter evenly.
11.Cook the Serabi until bubbles form on the surface and the edges begin to dry out.
12.Flip the Serabi and cook for an additional 1-2 minutes until fully cooked.
13.Serve the Serabi drizzled with the coconut milk syrup.
