Ingredients

1 1/2 lbs ground beef
1 small onion , grated
2 tablespoons parsley , chopped
1 egg , lightly beaten
1/2 cup matzo meal or 1/2 cup plain breadcrumbs
1/2 cup tomato juice
salt
pepper
4 tablespoons vegetable oil
6 onions , thinly sliced
4 cups water
1/2 cup raisins , soaked in warm water until plumped
12 prunes , soaked in water until softened
1 cup almonds , blanched
1 lb pumpkin , peeled and cut into 2-inch pieces , can use butternut squash
1/3 - 3/4 cup brown sugar , depending upon how sweet you want it
1 teaspoon ground cinnamon

Instructions

1.In a large mixing bowl, combine the ground beef, grated onion, parsley, egg, and matzo meal or plain breadcrumbs. Mix well.

3.Form the meat mixture into small balls, about 2 inches in diameter.
4.Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced onions and sauté until golden brown.
5.Add the water, raisins, prunes, blanched almonds, and cinnamon to the skillet. Bring to a boil.
6.Add the meatballs to the skillet, reduce the heat to low and simmer for 45 minutes, stirring occasionally.
7.Taste and add brown sugar to your liking and salt to taste.
8.Continue simmering for an additional 15-20 minutes or until the meatballs are fully cooked and the sauce has thickened. Serve hot over couscous.
