Ingredients

3 lbs chicken
8 cups water
1/2 bunch parsley
1 medium onion , sliced
1 teaspoon salt
1/3 cup raw rice
2 medium eggs
2 lemons , juice of
2 teaspoons cornstarch
3 tablespoons cold water
parsley ( for garnish )
pepper , to taste

Instructions

1.Bring water and chicken to a boil.
2.Reduce heat and add parsley and onion.
3.Cover and simmer for 1 1/2 hours, or until chicken is no longer pink.
4.Remove chicken from broth and set aside to cool.
5.Add raw rice to broth and simmer for 20 minutes, or until rice is tender.
6.Beat eggs and lemon juice together in a small bowl.
7.Mix cornstarch and cold water together in another bowl, then mix both bowls together.
8.Slowly add egg mixture to hot broth while stirring constantly; simmer until thickened, about 5 minutes.
9.Shred chicken and return to pot, then simmer until heated through.
10.Season with salt, pepper, and parsley, and serve.
