5 kaiser rolls , thinly sliced
3 tablespoons olive oil
1 small yellow onion , minced
2 cups milk
1/4 cup parsley , minced plus more to garnish
1/4 cup flour
1/2 teaspoon nutmeg , freshly grated

salt & freshly ground black pepper , to taste
hot pork gravy , for serving

Instructions

1.Preheat the oven to 350F (175C).
2.Spread the sliced kaiser rolls on a baking sheet and bake in the oven for approximately 10 minutes or until they are completely dried out. Remove from the oven.
3.Heat olive oil in a large skillet over medium heat. Add the minced onion and sauté until soft and translucent.
4.In a large mixing bowl, combine the dried kaiser rolls with the sautéed onion, milk, parsley, flour, nutmeg, and lightly beaten eggs. Mix thoroughly.
5.Season the mixture with salt and freshly ground black pepper to taste and let it rest for 10 minutes.
6.Bring a large pot of salted water to a boil. Reduce heat to a simmer.
7.Form the mixture into 8-10 round dumplings and carefully drop them into the simmering water. Poach for about 20 minutes or until cooked through. Remove with a slotted spoon.
8.Serve hot with hot pork gravy, garnished with parsley.
