Instructions

1.Take vanilla ice cream out of the freezer and let it soften at room temperature for about 5-10 minutes.

3.Add in thinly sliced fresh strawberries, coarsely chopped candied red cherries, coarsely chopped candied pineapple, coarsely chopped dried apricots, finely chopped candied lemon peel, and blanched slivered almonds. Mix well.
4.Pour the mixture into a 9-inch loaf pan, smoothing the surface with a spatula.
5.Sprinkle coarsely chopped semisweet chocolate on top.
6.Cover with plastic wrap and freeze for at least 6 hours, or overnight.
