Ingredients

3 cups basmati rice , soaked for a few hours
3 cups soft butter
1 cup sugar
1 teaspoon vanilla extract
1 tablespoon ground cardamom
1/4 cup almond nuts
1/4 cup cashew nuts
2 tablespoons grated coconut
3 cups chilled whole milk
1 teaspoon salt
1 liter cooking oil
powdered sugar , for dusting
Selroti is a popular Nepali snack or breakfast dish consisting of deep-fried dough made from rice flour and flavored with cardamom, nuts, and coconut. Instructions

1.Drain the soaked basmati rice and grind it in a blender until it forms a fine paste.
2.Add butter, sugar, vanilla extract, cardamom, almond nuts, cashew nuts, grated coconut, chilled whole milk, and salt to the rice paste and blend again until smooth.
3.Transfer the mixture to a bowl and let it sit for an hour.
4.Heat cooking oil in a deep frying pan.
5.Fill a circular funnel with the rice mixture and start squeezing it into the hot oil to form a spiral shape. Fry it until it turns golden brown and crispy from both sides.
6.Take the fried Selroti out and keep it on a paper towel to soak excess oil.
7.Dust it with powdered sugar before serving.
