Self Icing, Anise Cookies, also known as Anis Smakaker, are a traditional Scandinavian treat, often made during the holiday season. These cookies are flavored with anise, which gives them a slightly sweet, licorice-like taste. What sets these cookies apart from others is that they are self-icing - meaning that as they bake, a sugary glaze forms on the top, creating a beautiful finish. These cookies are perfect for gifting or enjoying at home with a cup of tea or coffee.

Instructions

1.Preheat oven to 350°F and line a baking tray with parchment paper.
2.In a large bowl, beat the eggs and anise together until light and frothy.
3.Gradually add in the powdered sugar, flour, and baking powder, continuing to mix until well combined.
4.Scoop teaspoonfuls of the dough onto the prepared baking tray, spacing them about 2 inches apart.
5.Bake for 8-10 minutes, or until lightly golden on the edges.
6.Remove from oven and transfer the cookies to a wire rack to cool completely before serving. No icing needed!
