Ingredients

5 lbs boneless lamb , cubed
2 cups mustard oil
1 cup sour cream
100 g garam masala powder ( incl.chilly , pepper , cumin )
2 pieces ginger
10 cloves garlic
2 teaspoons turmeric powder
1/4 cup lemon juice
1/4 cup vinegar
3 teaspoons salt
1 red onion , chopped
2 green chilies , chopped
ginger-garlic paste
1/2 teaspoon fenugreek seeds , for sauteed
1/2 teaspoon onion seeds , for sauteed
1/2 teaspoon cumin seed , for sauteed
2 large tomatoes
Sekuwa Tarkari is a Nepali dish that combines the flavors of grilled lamb with a tomato-based gravy. It is a popular dish in Nepal and is often served at festivals and special occasions. The dish is traditionally prepared over charcoal, which gives the lamb a smoky flavor. The gravy is made with tomatoes, ginger garlic paste, and sour cream, giving it a smooth and creamy texture. Instructions

1.Preheat oven to 400°F.
2.In a bowl, mix cubed lamb, mustard oil, garam masala, grated ginger, crushed garlic, turmeric powder, lemon juice, vinegar, salt, chopped onion, and chopped green chilies. Mix it well to coat the lamb pieces.
3.Leave it to marinate for about 3 hours.
4.Preheat your grill or skewer the lamb pieces onto the grill or barbecue.
5.Cook for 4-5 minutes on each side, making sure the meat is thoroughly cooked but still tender on the inside. If using an oven, put them in the oven tray and bake at 400°F for 25-30 minutes.
6.Meanwhile, heat some oil in a pan, add fenugreek seeds, onion seeds and cumin, then sauté it properly.
7.Add the chopped tomatoes and some ginger garlic paste and let it cook for a while.
8.Mix the sour cream with the tomato-tarkari mixture and simmer for around 5 minutes till the gravy becomes thick.
9.Pour the gravy over the cooked lamb and garnish it with coriander leaves.
