1 tablespoon butter

2 shallots , chopped
3 garlic cloves , minced
8 ounces chicken seitan strips
4 portabella mushroom caps , thinly sliced then cut into thirds
1/2 lb linguine

1/2 teaspoon basil
1/2 teaspoon parsley
1/2 teaspoon kosher salt

1/2 cup white wine ( Sauvignon Blanc )
1/4 cup heavy cream
1/2 cup parmesan cheese , grated

Instructions

1.Cook linguine as per package directions, and drain, set aside.

6.Add white wine and heavy cream, let it simmer until the sauce thickens.
7.Add cooked linguine to the pan and toss well to coat the pasta with the white wine sauce.
8.Serve hot, garnished with grated parmesan cheese.
