3 tablespoons maple syrup
1 tablespoon tomato paste ( I sometimes use ketchup )
1 teaspoon liquid smoke

Instructions

1.In a large mixing bowl, combine the vital wheat gluten, soy flour, nutritional yeast, paprika, garlic powder, and black pepper.
2.In a separate bowl, whisk together the warm water, soy sauce, maple syrup, tomato paste, and liquid smoke.
3.Add the wet ingredients to the dry ingredients and stir until well combined to form a sticky dough.
4.Knead the dough for about 5 minutes, then transfer it to a cutting board and shape it into a log.
5.Cut the log into thin slices and place them in a steamer basket over simmering water.
6.Steam the seitan bacon slices for 40 minutes, flipping them halfway through.
7.Meanwhile, in another mixing bowl, combine the remaining vital wheat gluten, soy flour, nutritional yeast, garlic powder, salt, warm water, and canola oil to form a smoother, less sticky dough.
8.Roll out the dough on a floured surface and cut it into pieces to form the fat of the bacon.
9.Once the seitan bacon slices are steamed, heat a large skillet over medium heat and add a small amount of oil.
10.Fry the seitan bacon slices and the fat pieces in the skillet until crisp and browned, about 3-5 minutes per side.
11.Serve hot as a delicious meatless bacon alternative.
