Ingredients

3 lbs baking potatoes , peeled and quartered
1/2 cup finely chopped onion
1/2 cup fresh lemon juice
1 teaspoon finely chopped seeded hot chili pepper
1 tablespoon salt
1/8 teaspoon fresh ground black pepper
1 pinch cayenne pepper
1 cup olive oil
1 lb sweet potato , peeled , cut in half lengthwise and then crosswise into 1/4-inch slices
1 lb fresh yucca root , peeled , sliced crosswise and cut into small wedges
4 ears fresh corn , shucked and cut into 4 rounds each
8 jumbo shrimp , raw in their shells
4 hard-cooked eggs , cut lengthwise into halves
16 pitted black olives
1/2 lb queso blanco , sliced 1/2-inch thick and cut into triangles about 2-inch long and 1-inch wide ( mozzarella or munster can be subbed )

Instructions

1.Boil the baking potatoes in salted water for 20 to 25 minutes, until they are tender when pierced with a fork. Drain and mash in a large bowl.
2.In a blender or food processor, combine the onion, lemon juice, chili pepper, salt, black pepper, cayenne pepper, and 1/2 cup of the olive oil. Add to the mashed potatoes and mix well.
3.In a large skillet, heat the remaining 1/2 cup of olive oil over medium-high heat. Saute the sweet potato and yucca wedges until they are golden brown, around 5 to 7 minutes. Add the corn rounds and cook until they are slightly browned, around 3 to 4 minutes. Transfer to a plate and set aside.
4.In the same skillet, saute the shrimp until pink, around 3 to 4 minutes. Transfer to a separate plate.
5.Arrange the mashed potatoes on a large platter and top with the sauteed vegetables, shrimp, hard-cooked eggs, black olives, and queso blanco triangles. Serve hot and enjoy!
