1 onion , chopped fine
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 1/2 cups tomato sauce , divided
1 cup water
1 tablespoon prepared mustard
2 tablespoons vinegar
2 tablespoons brown sugar
hot cooked noodles

Instructions

1.Preheat oven to 350°F.
2.In a large bowl, mix together ground beef, breadcrumbs or cracker crumbs, onion, 1 teaspoon salt, pepper, and 1/2 cup tomato sauce.
3.Add water, mustard, vinegar, and brown sugar to the remaining 1 cup tomato sauce and mix well.
4.Pour 1/2 of the tomato sauce mixture into the bottom of a loaf pan.
5.Shape meatloaf mixture into a loaf and place on top of the sauce.
6.Pour remaining sauce over the top of the meatloaf.
7.Bake for 1 hour and 15 minutes or until fully cooked, basting occasionally with the sauce.
8.Serve with hot cooked noodles and garnish with parsley.
