Ingredients

4 fillets fresh salmon
salt and black pepper to taste
1 tablespoon butter
2 medium onions , diced
8 cloves garlic , minced
1 cup chopped portobello mushrooms
1 cup fresh porcini mushrooms , cleaned and sliced
1/2 cup diced fennel bulb
1/2 cup diced celery
1 teaspoon curry powder
1/2 teaspoon saffron
2 cups chicken broth
1 cup heavy cream
1 tablespoon butter
4 sprigs chopped fresh parsley for garnish
4 lemon slices for garnish
2 tablespoons thinly sliced green onion for garnish
Seared Salmon with Indian-Inspired Cream Sauce is a fusion dish that combines fresh salmon with an aromatic, creamy sauce. Instructions

1.Preheat the oven to 375 degrees F (190 degrees C).
2.Season salmon fillets with salt and black pepper
3.Heat a skillet over medium-high heat. Add 1 tablespoon of butter in the skillet. When the butter is melted, add the salmon fillets and cook for about 2-3 minutes each side until the salmon is seared and browned.
4.Remove the skillet from the heat and transfer the salmon fillets onto a baking dish. Place the salmon fillets in the oven and bake for about 12-15 minutes, or until the salmon is cooked through.
5.In the meantime, heat a saucepan over medium heat, melt 1 tablespoon of butter, and add the diced onions, minced garlic, diced fennel bulb, and diced celery. Cook the veggies for about 10 minutes until they are softened.
6.Add the chopped portobello mushrooms and sliced porcini mushrooms in the saucepan and stir for about 2-3 minutes.
7.Add the curry powder, saffron, chicken broth, and heavy cream in the saucepan and stir to combine. Bring the sauce to a boil, then reduce the heat and simmer the sauce for about 10-15 minutes, until the sauce has reduced and thickened.
8.When the salmon is finished cooking, remove it from the oven and place each fillet onto a plate, top with a spoonful of sauce and a sprinkle of chopped fresh parsley and sliced green onions. Garnish with a slice of lemon.
