Ingredients

4 kangaroo fillets
2 tablespoons thyme , chopped
25 g porcini mushrooms , dried
25 g morels , dried
2 garlic cloves , sliced
100 g butter , diced
1 teaspoon truffle oil
2 tablespoons oil
125 ml port wine
2 field mushrooms , large , sliced
50 g shiitake mushrooms , sliced
2 cups fresh corn kernels
2 cups cream
1 cup cabernet sauvignon wine
1 cup veal , jus
1 bulbs shallot , chopped
1 lemon
1 tablespoon fresh flat-leaf parsley , chopped

Instructions

1.Preheat oven to 180°C.
2.Place the dried mushrooms in a bowl and soak in boiling water for 10 minutes and then drain.

9.Sear the fillets for 3 minutes on each side and then transfer them to the preheated oven for 5 minutes.
10.In another pan, combine the rest of the butter, cream, corn, cabernet sauvignon wine, veal jus and shallots.
11.Bring to a simmer until the corn is cooked and the mixture has thickened.
12.Add remaining oil to a pan and sauté mushrooms.
13.Add the lemon juice and parsley and season with salt and pepper.
14.Serve the kangaroo fillets with the mushroom mix and the creamed corn on the side.
