1 sweet onion ( such as Walla Walla ) , sliced
8 ounces mushrooms , sliced
salt and ground black pepper to taste
1/2 cup Washington state red wine ( such as a Merlot or Syrah )
4 grass-fed ground beef patties
Seattle Aioli :
1/2 cup mayonnaise
1/2 teaspoon Sriracha sauce
1 cup farmer 's market arugula , or more to taste

Instructions

1.Heat vegetable oil in a skillet over medium heat.
2.Cook onion and mushrooms in the hot oil until onion is translucent, about 5 minutes. Season with salt and black pepper.
3.Add red wine to the onion mixture and continue cooking until most of the wine has evaporated, about 5 minutes.
4.Preheat an outdoor grill for medium-high heat and lightly oil the grate.
5.Season beef patties with salt and black pepper.
6.Grill patties on the preheated grill until browned and no longer pink inside, about 4 minutes per side.
7.While the patties cook, combine mayonnaise and Sriracha sauce in a small bowl.
8.Serve burger patties on buns, topped with the onion and mushroom mixture, an aioli, and arugula.
