Ingredients

1 cup water
500 g firm white fish , cut into chunks
500 g salmon , cut into chunks
200 g scallops or 200 g prawns
1 bay leaf
1 onion , sliced
2 1/2 tablespoons butter
2 1/2 tablespoons flour
1 cup milk
6 green onions , finely sliced
1/4 cup snipped fresh dill
8 sheets phyllo pastry
cooking spray
Seafood Filo Pie is a savoury dish that originates from Greece and Turkey. Traditionally, filo pastry is used to encase the filling, which is often made up of vegetables, cheese, or meat. In this recipe, we are using seafood to create a delicious filling that is combined with phyllo pastry to create a crispy and flaky dish that is hard to resist. This pie can be enjoyed as a main meal or shared as a party or potluck dish. The combination of seafood and flaky pastry makes it a crowd-pleaser that is sure to impress your guests.

Instructions

1.Preheat the oven to 190°C.
2.Place the water, fish, salmon, scallops or prawns, bay leaf and onion in a saucepan and bring to the boil. Reduce the heat and simmer for 4 minutes. Drain the liquid and discard the bay leaf.
3.In the same saucepan, melt the butter and stir in the flour until smooth. Gradually whisk in the milk, stirring until thickened. Add the drained seafood, green onions and dill. Stir until combined.
4.Spray a 23cm diameter pie dish with cooking spray. Lightly spray each sheet of phyllo pastry with cooking spray and layer in the dish, allowing the excess pastry to overhang.
5.Pour the seafood filling into the pastry. Fold the overhanging pastry over the top of the filling.
6.Bake for 25 minutes or until the pastry is golden and crisp. Serve hot.
